Ingredients:
- 2 tablespoons canola oil
- 1/2 cup honey
- 1/3 cup plain, fat free Greek yogurt
- 1 egg
- 15oz can pure pumpkin
- 1 tsp pure vanilla extract
- 1 tsp baking soda
- 1 tbsp. pumpkin pie spice (I used Trader Joes brand)
- 1/4 tsp salt
- 1 1/4 cup flour
- 3/4 cup rolled oats
Directions:
- Preheat oven to 325 degrees F
- Spray a mini muffin tin with baking spray
- In a large mixing bowl, whisk together the oil, honey, and Greek yogurt.
- Whisk in the egg, vanilla, and pumpkin puree.
- Using a spatula, stir in the baking soda, pumpkin spice, and salt.
- Gently stir in flour and oats until combined.
- Spoon batter into the 24 mini muffins and bake for 20 minutes.
- Place on a wire rack and allow to cool for 5 minutes.
- Remove muffins from pan and transfer to wire rack to continue cooling for an additional 10-15 minutes.
The muffins can be stored in an air-tight container for 3-4 days or placed in a zip lock bag and frozen for up to 3 months.
