Air Fryer Parmesan Breaded Chicken

If you received a new air-fryer for Christmas or have had one for a while, you should check out this new air-fryer parmesan breaded chicken recipe developed by our dietitian. The air-fryer is a wonderful way to be able to prepare delicious, crispy food without a ton of added fat from oil. With only 220 calories and 6g carbs per serving, this is a guilt-free recipe to start your new year off right!
Ingredients:
4, small chicken breast (about 4oz each) OR 2 large chicken breasts, sliced horizontally in half
1/2 cup bread crumbs
1/2 cup Parmesan cheese
1/4 cup plain Greek yogurt
1 tbsp. honey mustard
Directions:
- Mix Parmesan and bread crumbs together in a shallow bowl.
- Mix Greek yogurt and honey mustard in a separate bowl.
- Dread chicken in yogurt mixture and then bread crumbs.
- Place on air-fryer pan, sprayed with cooking spray to prevent sticking.
- Cook at 380 degrees for 10 minutes. Turn and rotate the chicken, and cook for an additional 5 minutes.
